Coconut flour is in transit to us now (finally) and is expected in David in about 2 - 2.5 weeks. We have a limited amount of shredded organic coconut now.
I think I've seen it in Organica at Los Establos Plaza, Kris. I was just reading an article on Facebook today about making your own flour. Basically you just grind up whatever you want to use for the flour such as nuts, wheat berries etc. So, I was thinking, if you have some dried coconut flakes try grinding them up in a blender or coffee grinder to make your coconut flour. Of course, the finer the grind the better.
