Yes, the benefits of "raw" coconut, and palm, oil are well documented and I eat them regularly. The health scare campaign against saturated fat pushed a lot of people into the waiting arms of Big Agra and their very unhealthy vegetable oils and hydrogenated margarine. Hmmm, I wonder if big agra funded any of the "studies" which purported to show that eating saturated fat would make you sick by raising your cholesterol, leading to heart disease?
Aceite de Coco is some the worlds best cooking oil and is commonly used for frying and baking. Great for the hair and skin, as a moisturizer. Beginning to be used more in baking and is being touted to lower cholesterol ,fight off fungus,candida & yeast. Rumored to reduce abdominal fat.
Some may have a different opinion, but I prefer the "cold processed" coconut oil, which usually comes from the Philippines. The local product is heated as part of the extraction process and the resulting oil is denatured to some extent and does not have the fresh, fruity coconut fragrance and taste and it does not have the same shelf life, which is 2 years for the cold processed. This cold processed type is available from Finca Santa Marta at the Tue market and from Jane's Food Pantry/Buying Club. I believe Organica sometimes has a pre-packaged brand as well.
Coconut oil you get at any agropecuaria shop (el Rancherito in David). It is very cheap. I use it on my horses, keeps the flies away and keeps their fur shiny.
Nutiva brand extra virgin is available at the Organic store in Los Establos Plaza.( forgot the name,but you can't miss it.) Not cheap.Tuesday market ,Lynn,I think is her name- has it, gets it from Bocas,she says & sells good homemade cold pressed soap too.
