Hello and a Happy Thanksgiving to all. I wonder if anyone knows where I can buy Jiffy corn bread mix around here. I use it in a casarole. I think I saw it once but don't remember for sure and where, if I did see it. It comes in a blue box. Thanks!

The women at the Café I frequent make their own corn tortillas from scratch, not with Maseca, they start with whole kernels. The local markets sell it in big sacks.
There are sacks of kernels everywhere that folks use to make corn tortillas. Anyone thought about milling their own, maybe with a coffee grinder? Also, there are several different grades of local corn flour on the grocery shelves, some finer than others. Why does it have to be in a kit?
Keith, to make corn tortillas you need corn meal that has been cooked with slacked lime, then dried and ground.
The most popular brand is MaSeCa, which you can buy in Super Baru for about $2 for a bag.
They are very easy to make and taste so much better than store bought. Especially the dried out moldy ones you find here.
I've been looking for good old-fashioned cornmeal and haven't been able to find it.
Cornmeal is everywhere, different grinds. But, of course, that is not the same as "cornbread mix". Also, yes, there are kernels in the mix at Pricemart, but they can easily be sifted out.
the only place I have found Jiffy Corn bread is in Riba Smith.
The Jiffy Clone recipe doesn't come out quite the same.
The Pricesmart version is different too, it has dried corn kernels in it. It's a bit sweeter, I think.
I am from the South, which makes me an expert on cornbread.....LOL! I have never seen Jiffy here although I will say the large box of cornbread mix at Pricemart is very, very close. Its sweet, like Jiffy.
The big box of Kirkland cornbread mix is really yummy. Has 4 pouches in it. It is at Price Smart if you (or someone you know) is going there.
