I've never seen egg beaters here. You can freeze egg whites. They will whip up fine when thawed. My cheese cakes have whole eggs in them, so I can't help you there.

I don't think you can make meringues, sponge cake etc. if that is your intended use out of them, but I could be wrong about that.
