Is anyone willing to share some of their favorite ways to prepare vegetables and starch alternative dishes that are verily easy to make. Quite a while ago, in one of the blogs, someone posted the name of a store in David where fresh tofu can be purchased. I can't find that post again.....it seems there's no way to do a search. Does anyone know where I can find that fresh tofu in David?

I have been an on and off vegetarian for many years, but the last year and a half I have stopped eating all animal products. My health has improved dramatically. It is a challenge to be very low fat plant based here in Boquete but growing my own veggies has helped. Hopefully I will have some to share in a couple of months (they are drowning right now!)
Three books that were instrumental in my health turn around thru diet were The China Study (Campbell), Prevent and Reverse Heart Disease (Esselstyn), and Eat to Live (Fuhrman)

Not quite yet a vegetarian, but definitely moving in that direction. It sure would help to know where to buy good veggies here in Boquete and also (biggest problem for me) good, tasty & easy ways to prepare my food. Good idea to start this group. I hope we can get some feedback from others.
