Beef Rib Candy with my Kick’ed Up BBQ Sauce

This is another BBQ sauce that I like to use for a tropical weekend BBQ with friends. Simple delicious with BIG flavors and a “kick”! Use this with chicken, meats, pork and really anything you would use BBQ sauce for. My thing is Beef Ribs, I cook them to what I call Rib Candy. Long and slow, basting with this BBQ sauce. The result is amazing. Give it a try and ENJOY!!!

Ingredients

2 cups Maple or Apple Smoked Bacon Diced
6 cups Onions Diced
1 teaspoon Cayenne Pepper
1 teaspoon Crushed Red Pepper
1/2 cup Grain Mustard
1 cup Honey
8 cups Ketchup
1/2 cup Molasses
1 cup Brown Sugar
1/2 cup minced Garlic
1 cup Apple Cider Vinegar

Instructions

In a thick bottomed pot, cook the diced bacon over medium heat until crisp. Remove the bacon. Add the onions to the rendered bacon fat and cook over low heat until soft, but not browned. Add the cayenne pepper, garlic, crushed red pepper, vinegar, honey, brown sugar, vinegar and mustard. Cook on medium heat until the liquid is reduced by half. Add the ketchup and Molasses, continue to simmer and stir occasionally for 10 minutes.
