2 cups Cajun Trinity
6 Cloves Garlic
1 cup thinly sliced green onions
10 cups shrimp stock
3 bay leaves
1/4 teaspoon Cayenne Pepper
3/4 cup dark roux
2 cans fire-roasted diced tomatoes (14.5 ounces each)
1 tablespoon Cajun Creole Seasoning
2 tablespoons Blackening Seasoning
1 tablespoon gravy maker browning sauce
1 pound cooked, deveined shrimp
1 pound Cajun Sausage
Cooked Rice
Gumbo Filé, to taste
Slice and Brown the Sausage. Combine the first 10 items and bring to a boil. Reduce heat and continue simmering for 30 minutes. Adjust seasonings to taste. Add shrimp and bring to a boil. Immediately remove from heat and serve over cooked rice. Apply filé powder at table to taste.
