Boquete Fish Taco's
We know of a few places in Boquete who make them good. But these, Ummm Ummm!

Ingredients
1 1/2 tablespoons reduced-fat sour cream
1 tablespoon minced fresh cilantro
1 1/2 teaspoons fresh lime juice
1/2 teaspoon red wine vinegar
TACOS:
4 (6-inch) corn tortillas
2 Corvina or similar light white fish flaked
1/2 cup vertically sliced red onion
1 lime, quartered
Preparation:
- To prepare dressing, combine first 4 ingredients, stirring well with a whisk.
- To prepare tacos, place tortillas in a zip-top plastic bag; microwave tortillas at high 40 seconds. Saute or pan grill the fish in a little salt, pepper and touch of hot sauce, divide the fish fillet and onion evenly over half of each tortilla; drizzle each serving with about 2 teaspoons dressing. Fold tortillas in half.
- Serve with lime wedges.
