Jumbo Shrimp Puttanesca

1-2 Pounds Fresh Jumbo Shrimp peeled & deveined
4 cloves Garlic Minced
1 large Shallot Minced
3 Tablespoons Butter
1/3 cup dry white wine
Juice of 1 Lemon
1 Tomato Peeled & seeded
1/2 tablespoon Fresh Oregano Minced
1/2 tablespoon Fresh Italian Parsley Minced
1 Tablespoon Capers
2 Tablespoons Black Olives Sliced
2 Tablespoons Olive Oil
Salt & Pepper to Taste

Heat a saute pan until it is smokin’ hot. Add the Olive oil and the Jumbo Shrimp. Sautee over high heat and add the Shallots & Garlic. Add the tomatoes, fresh herbs and the white wine. Reduce the white wine by 1/2 of it’s volume. Then add the capers, Olives and Lemon juice. Swirl in the butter and salt & pepper to taste. ENJOY!!!
