Roatan Coconut & Key Lime Pie

Living on Roatan with our fresh fruits and coconut trees makes one think, “What can I do with all of this good stuff”? How about a Delicious Lime and Coconut Pie made with fresh local ingredients? This Fabulous Dessert is the answer, easy to make, not too sweet and so satisfying! You will done mixing and cooking in just a few minutes. lets get to it:

Roatan Coconut & Key Lime Pie

16 ounces of Cream Cheese ( 2 – 8 ounce packages )
1 Cup of Sweetened Shredded Coconut
4 Large Eggs
1 Teaspoon Real vanilla
1 Cup Suger
1/2 Cup Key Lime Juice
1/2 Cup Heavy Cream
1 Teaspoon Fresh lemon Zest

Some extra shredded coconut to toast

2 Pie Crusts ( I like a Graham Cracker Crust, but your choice )

Heat oven to 350 degrees.
In a large deep bowl, put the Cream Cheese, Sugar and Eggs. Using a hand mixer on medium speed, blend until smooth. Add the vanilla, Heavy Cream and Lemon Zest, blend for another minute. Now add the coconut and blend a minute more. Now pour the mixture evenly into your two pie shells and bake 30 to 35 minutes. Chill overnight in the refrigerator and serve. Sprinkle a little toasted coconut and a dollop of whipped cream and ENJOY!!!
