  • We moved to Boquete in January.  I had been following posts on several boards for several years prior to our arrival.  I was delighted to see an actual GF group here in Boquete.   My question is about the level of interest to pull a group together for an exchange of knowledge, sourcing of GF items and having a meal together about once a month.  My background includes blogging about gluten free in the commercial food industry, summarizing the latest medical research on celiac and related health issues, working with restaurants to practice safe gluten free and other allergenic food handling practices and providing restaurant reviews for those establishments that cater to special diets.  For the past 35 years, I've eaten my way through some pretty awful GF products and have discovered some of the best items as well.  I'm happy to share my knowledge and experience and would like to learn from others as well.  Is anyone aware of a groups other than this one on .ning?  I'd like to try and pull it all together.  (BTW, I LOVE Colleen's products)  Thanks.

    Since gliadin is a morphine-like substance my best-educated guess is that the combo of coffee and gluten foods may precipitate/exacerbate a carbohydrate addiction to mood foods.

  • Today's bread wheat is a hybrid known as Triticum aestivum, and full of gluten.  This modern wheat evolved from wild emmer (T. dicoccoides). Einkorn, the first domesticated grain, is not related to emmer or modern wheat.

  • Olga...thank you for making us aware that oyster mushrooms are grown in Boquete. Great news!  WIll you share where we can purchase them and how to contact the provider?

     

  • Twenty years ago when I first searched non gluten/wheat alternatives I turned to corn and soy products. However I have grave concerns about these two products because today they are known to be  100%  GMO products. Recently I learned Whole Foods knowingly sold hords of GMO products but knowingly misled their customers This has reinforced my awareness of how ( for myself and my family's health )I  need to do my own research about package manufacturers. I've been doing product research  over the years but it is exhausting trying to identify the big companies that own the front companies that "claim" their food is healthy:  I've been  looking at all unhealthy ingredients. So for now. So as for Corn and soy...I avoid any corn or soy products.. Mostly, I do not eat packaged-processed foods. I've turned to FRESH natural foods and am enjoying all of Boquete's FRESH  "organic" prouduce and offering. I've found I really do have taste buds becasue these food are popping with flavors. I find other food options than sandwiches. IE: Sometimes I am using kale or collard leaves (after a quick dip in hot water to soften and take the bitterness out) for rolling sandwich fillings.
