Heirloom Tomato & Sausage Marinara Sauce

1/2 Cup Olive Oil
1 large onion minced
6-8 cloves of garlic minced
6 ounce can of Tomato paste
10 pounds of Heirloom Tomatoes peeled & seeded or
2 large cans of peeled whole tomatoes (crush with hands)
1/2 teaspoon red pepper flakes
2 bay leaves
1 tablespoon Sugar
1 teaspoon black pepper
1/4 cup dried basil
1 teaspoon salt
5 sweet Italian sausages

This is an Italian sausage marinara sauce that is second to none. Easy to prepare and delicious EVERY time! I love this sauce over any type of pasta or on a homemade pizza. Try it over chicken parmesan with lots of melted mozzarella. The combinations are endless. The key to a great sauce is more dried basil than you would think is necessary. As always in my recipes, nothing is set in stone, experiment on your own and create your personal culinary masterpiece!

For those of you that have access to heirloom tomatoes, peel and seed your own and experience the pleasure of the intense flavors available to you.

Begin by taking the membrane off the sausages and real easing the meat inside. Saute all of the sausage meat until browned. Discard the rendered oil and reserve the sausage for later. Now, sauté the onions in the olive oil for 5 minutes or so, add the garlic and red pepper flakes and sauté one or two minutes more. Make sure that you control the heat as not to burn the garlic. Add the tomato paste and sauté the paste with for a minute more while stirring. Add the crushed tomatoes, sugar, black pepper, salt, bay leaves, sausage and dried basil. Simmer for an hour or so until desired texture and taste is achieved. Season to taste with more salt or some extra red pepper flakes to your liking. Finish with some fresh basil and a high end grated romano cheese. ENJOY!!!!
