I think a Mexican food place would be great , or at least an additional one...as the current one has some of the true Mexican stuff, but not Tex Mex....If I dont get my Tex Mex fix once a week, I get cranky...as a matter of fact will have it for lunch today (As I dont LIVE in Boquete, but will visit soon again)...once visiting Europe (most every year) , my first meal back in Texas, its Mexican food , Tex Mex style...with frozen Margaritas

Agreed! A good Tex-Mex place and I'd NEVER have another reason to go to the US. In my nearly 15 years living here I've seen them come and go. Panamanians for the most part cannot do picante. Mexican food without a little chiles is like a pool hall with no beer....sooo.......they open up and take away the chiles (for the locals) and nobody goes. Best thing is to learn to make it yourself. Tortillas are available at the border. Takes a little time to learn but once you've got it you're good. The guy from Bocas (Gary) had a wonderful place in Bugaba but just not enough patronage. Mediocre Mexican or Tex Mex is just not worth the trouble.

Well this, I think, is where Parisians and Americans may differ. Or maybe not. In recent years Americans have come to embrace the cuisine of many different countries and ethnicities. And I think its really a good thing to try something different in food. That doesn't mean that I don't like plain rice and beans and plantains, but, as they say, "variety is the spice......."
For real mexican food try Burricos in Volcan. The owner is Mexican.The food is authentic and the service is great.

i love burgess mex! i get sick of hearing people say "THAT'S NOT REAL MEXICAN". for cryin out loud very few people have actually experienced REAL traditional mexican food.
Hola Susan - there are many varieties of "real" Mex food. Mexican cuisine is regional. For instance the food they prepare in the North along the US border is completely different from the food in Oaxaca, Puebla, or Veracruz. Additionally, Yucatan cuisine is spectacularly different from the food offered in Chiapas. Every Mexican I ever talked to is proud of his/her region's cuisine.
Having lived in Texas, I can appreciate what Bjorn says about Tex-Mex - it rocks the Pinto bean for sure. But you would never find a Pinto bean in Southern Mex cooking - they use the Black bean (frijol negro). Where I lived in California for 11 years we had a lot of GREAT Taquerias that were owned by folks from Jalisco or Michoacan - seemed like there was one on every corner in Silicon Valley and they are all different from what I ate when I lived in San Antonio or other parts of the Texas Hill country. Man, all this talk about Mexican food is making me hungry! Too bad there isn't a decent Mexican restaurant in Boquete, but I'm afraid Keith is right when he says the local folks aren't inclined to eat this kind of food. I can't imagine anyone opening a REAL Mexican restaurant here and being successful with it. Ingredients aren't easily available and in order to get them, the prices would have to be quite high.
And shredded beef - ni madres, as they say in Mexico! Truth is, I've never seen Nachos, Crisp Tacos, or ground beef dishes in Mexico and I lived there for years. In any case, doesn't it always come down to personal taste?
Just my thoughts - now I have to go make a Quesadilla to settle my nerves...
