Quite some time ago I remember seeing a post in which the writer indicated what they missed the most one or more spices that were not available locally. I am moving to Panama in August and wondered what those spices might be. Can anyone tell me what spices are not available locally? I would be happy to bring a couple extra bottles for others.

For your personal kitchen, i have found that it is hard to find:
thyme, dill weed, chipotle, cardamom, and jerk seasoning.

I find thyme in the small cellophane packets often. Tomillo.
Bring sage. I can never find sage. I found it only once many years ago. Poultry seasoning, which includes sage, is available though.
Eric of 2 Guys and a Cooler at the Tues. market can get some of the spices that are not found here, like cumin seeds and garam masala.
